Looking for Google Sheet export to Markdown

What kind of formatting you need to preserve? For plain text, just a copy and paste (without formatting) operation should produce usable Markdown text.
For formatted cells, you could simply copy the sheet to a Google Doc via clipboard (that preserves the formatting). From Google Docs there are several conversion paths available, for example:
But the paste destination does not have to be Google Docs, you could try for example this site:

The MarkItDown service removes the spreadsheet table formatting, so it could be your best and least complicated option.

My use case right now is:
Google Form => all entries get automatically added to a Google Sheet
Google Sheet => rapid output to a CL data file
For example, if I run an NPC contest and want to take the best entries and make them into a CL file with basic formatting.

That is an interesting use case!
If you run a contest asking for complex entries like NPCs, it would probably make sense to use multiple Google Form text fields for one contest entry. That way you will have more control over the format and will produce a Google Sheet whose processing is easier to automatize.
Perhaps the permissively licensed gdocs2md script could be taken as a starting point and modified to automatically apply also some additional, CL-specific log entry formatting to the Markdown export?
